CHOCOLATE CHIP COOKIES

 I don't usually do posts on the weekend but seeing as though i haven't posted anything on my blog in a while I thought I may as well share with you the great Chocolate chip biscuit recipe I've been baking recently. All nice and crispy with fine cracks on the top the biscuits look really good. My husband says they remind him of his childhood and that makes him happy :)

CHOCOLATE CHIP COOKIES (CAN BE WHEAT-FREE OR REGULAR)

125grams butter (at room temparature and cubed)
1 teaspoon vanilla essence or one vanilla pod
1 and a quarter cups brown sugar
1 egg
1 and three quarter cups (upto 2 and cups)Gluten-Free flour of choice (eg. rice flour, gluten free flour mix)OR (1 and a half cups regular flour)
1 teaspoon bicarb
1 teaspoon baking powder
80 grams dark chocolate or chocolate of choice


METHOD:
Preheat oven to 180 degrees celcius
Beat butter, vanilla, brown sugar and the egg until smooth and lump free.
Add to the mix the flour, bicarb abd baking powder.
Mix until everything is well incorporated.
If using normal cake flour use the 1 and a half cups of flour but if you are using a wheat free/ gluten free flour then add more flour until the mixture is nice and kind of stiff like a workable play dough.
Chop up chocolate and mix in.
Roll into small balls and flatten gentle with your hands and place on a greased baking tray.
Allow space for spreading between the biscuits and place in the oven.
Bake in the middle shelf for 7 - 10 mon or until lightly brwoned.
take out and let them cool before taking off the baking tray and placing in jars or on a plate for tea

  4. That's so sweet about your husband. I know I have succeeding when my husband compares my food to his childhood food. A boy is a sucker for memories like that.

  5. Thanks for visiting my blog. :) I haven't made choc chip cookies in a long time. I'll have to have the kids help me make some next week. Right now I'm up to my eyeballs decorating GF sugar cookies.

  10. thanks for this stunning and simple recipe! I used a slab of albany dark choc and a gluten free flour mix of my own making. The result has been melt-in-the-mouth delicious! If there are any left when the kid and hubby come home I'm sure they'll love them too.... come to think of it I may just hide the rest for myself:-)

  12. When & how do you put the chocolate in the batter? No chocolate chips? Please clarify. I made your apple cookie dough recipe and the dough is so yummy I look forward to making this but want to know about the choc. chips or choc. bars you use. Thanks so much.

  14. Thank you Betty for responding so quickly. I am so grateful for your recipes because so much of the gluten free foods sold includes xanthan gum & I get sick from this. Now I can make my own yummy stuff using guar gum. You are a God send for me. God bless! Hugs right back!

  16. Hi Betty. How are you? Choc. chip cookie night for me, yay! I have a question. I put 2 1/2 cps gluten free flour and it's still not firm enough to roll. I can spoon it but not roll and flaten. I'm placing the dough in the fridge to see if it'll firm up. Should I add more flour next time around. I'm concerned that it'll be to floury and not tasty enough....

  17. did you add upto 2 cups of wheat free flour? i find with wheat free flour i always have to add more than regular flour to my recipes to make it the right consistency - and I don't think you will use your flavour :) it could be a perfect excuse to add more chocolate chips :) hehehe

  18. I did. I used 2 1/2 cups of home made gf flour (it included 2 1/4 tsp guar gum). They came out very yummy, but I was unable to roll them. I will spoon them next time cuz my hands were all sticky :).
    My non gf daughter loves them too & is hooked!
