It really is a VERY easy and Yummy cake :) Its one of those cakes that you can make in 1 bowl and whip up and place in the oven while supper is being prepared. It is THAT easy!

INGREDIENTS
100 grams Brown sugar
2 eggs
120 grams Gluten Free flour (you can use regular flour - just use a bit less)
1 and a half teaspoons baking powder
1 vanilla pod or a generous teaspoon of vanilla essence
1/4 - half a cup of milk
METHOD
Beat together the sugar and eggs until pale and thick.
Sift in the flour and baking powder and stir in lightly, but do make sure there are no lumps.
Scrape in the seeds of a vanilla pod or essence.
Slowly add the milk until nicely combined and you have a medium/thick batter.
Place in a buttered and floured cake tin
Bake at 180 degrees celcius for 20 min or until golden and springs back to the touch.
Allow to cool before slicing in half and filling with cream and sifting icing over the top
Or decorate as desired
