We all like to eat healthier. I know I feel much better when consuming more vegetables and less junk. These are a vegetarian's dream with great flavour and so easy to make.
This recipe is more of a guideline and something I make often for my family.
These vegetable cakes/patties pair well with salad and go great with some fried egg and avo on top.
They make great lunch box snacks if you have any left over.
Would go great at a party - make tiny ones and top with cream cheese.
Substitute out any vegetables you like or have on hand.
They really are super easy and delicious
*This is a rough guide and you will need to judge and feel if you need to add more flour to make the right consistency

INGREDIENTS
5 small to medium baby marrows (courgettes)
1 - 2 onions (these really add the flavour so don't skimp on them)
2 medium carrots
a piece of butternut (leave out if you don't have)
1 corn on the cob
salt
pepper
a few pinches of dried origanum
1 - 2 eggs
5 Tablespoons to 1 cup of gluten-free flour
seeds of your choice: poppyseed, linseed, sesame seeds - a few table spoons of each (leave out if you don't have)
Oil for frying - I used a mixture of coconut oil and olive oil together
METHOD
Grate all the vegetables you have (except the corn) into a medium to large bowl: baby marrows, onions, carrots, butternut and any others you decided to add.
Cut the corn off the cob and add to the bowl.
Add the eggs and salt, pepper, dried origanum, seeds and stir.
Add enough flour until you feel you have a good consistency for frying. The consistency of the mixture should stay together when a spoon full of batter is added to the pan and flatten with the back of a spoon.
Fry until the edges are hardened up and then flip with an egg lifter.
Fry until both sides are golden brown and then store in the oven on a low setting until you have completed the whole batch.
I fry 3 medium patties/cakes at a time in my pan.
Makes roughly 10 - 15 patties depending on the size and thickness you make them.
Enjoy with a salad or fried egg and avo - or just plain.
I love to eat them the next day straight from the fridge
SUBSTITUTES
feel free to substitute/swop or add vegetables in the recipe like:
potato
sweet potato
cooked quinoa
left over roasted vegetables
add some grated cheese for a lovely flavour
some cooked and finely chopped bacon
anything else you can think of :)
