I dipped them in chocolate for added summer fun. And who doesn't like chocolate?
Technically these can't be called Pina Colada popsicles because I omitted the Rum to make them family/kid friendly but if you would like to make them with some kick then add a little Rum to the recipe.
4 Ingredients and healthy too (bonus)
I used shot glasses to make these cute popsicles. I simply inserted ice cream sticks into the glasses - because I pre-froze the banana and pineapple before I blended it and placed the mixture into the glasses I didn't have to worry about the sticks falling over - they were soooo easy to make and are a great size to - not to big or to small - also a great size for enough for kids.
I loved that it was frozen in glass and not plastic as I didn't have to worry about any weird things from the plastic leeching into your healthy treats.
INGREDIENTS
1/2 sweet pineapple
3 small to medium bananas
1 small tin of coconut milk
100grams 70% cocoa dark chocolate (optional)
METHOD
Peel your bananas and pineapple and slice into small pieces/chunks.
Place the pieces of fruit into freezer safe glass jars or containers and place in the freezer until frozen (I placed mine there over night - but 2 hours should do)
Take your frozen fruit and place in a blender - blend till smooth (scraping down the sides of the jug every now and then)
Add the tin of coconut milk and blend in
Spoon your mixture into the glasses/ moulds and insert sticks
Place back into the freezer and allow to re-freeze (roughly an hour or 2)
Once your popsicles are frozen begin to melt your chocolate in a double boiler.
I put the chocolate in a small thick glass placed in a small pot of water and allowed it to melt over very low heat.
Un-mold your popsicles and dip in the chocolate. Wait a few seconds for the chocolate to harden then place back in the freezer until ready to be eaten
OR eat immediately!
