COCONUT MUESLI

This is like having dessert for breakfast!

Fresh coconut thinly sliced and then toasted can not be compared to dried out coconut toasted! really once you have cracked up a fresh coconut and put a thin sliver under the grill until lightly golden - oh my yum! I never knew what I was missing... I strongly suggest you try (if you like coconut that is)

Muesli is one of those recipes you can adapt to your tastes and budget... Its more like a guideline than a recipe

If you don't have fresh coconut then substitute for dried/dessicated coconut

I add my dried fruit on the toasting/ roasting stage as they puff up and get slightly cooked resulting in a chewy consistency when cooled down :)

INGREDIENTS
500grams Rolled Oats (organic or gluten free)
4 Tablespoons honey (or other sweetening of your choice - maple/ agave etc)
4 Tablespoons coconut oil
salt
cinnamon (I used 2 Tablespoons) which is more than most people like so start with a little and keep tasting as you add
half a cup Sunflower seeds
a few Tablespoons poppy seeds

half a cup raisins
a large handful of pitted dates chopped up
half a cup dried berries ( I used cranberry, pomegranate and goji berry mix)
grated fresh coconut roughly half a cup

METHOD
Place everything in a large oven proof dish and place under the grill (even the dried fruit)
Watch very carefully and stir often
When grilled/ browned to your liking (make sure the coconut is browned and no longer wet/fresh so it will last in your container without going moldy) take out and allow to cool
When totally cold place in an airtight jar or container

Serve with milk and fresh fruit of your choice (or just plain). Its delicious either way

I served mine with sliced fresh banana, grated fresh coconut and chopped up dark chocolate with some milk over the top
