BUTTERNUT BAKE




Every one needs a few simple side dishes they can throw in the oven or in a pot on the stove and not have to worry. These side dishes should be relatively quick to prepare and always have a nice outcome, going with most things.


Simple Sides - I have been thinking of adding this catergory to my blog for a while now.
And today I thought why not? It isn't a major recipe but more an easy to follow idea. Nothing complicated or requiring to many ingredients. But it does make supper just that much easier to prepare.




INGREDIENTS
1 medium to large butternut
2 garlic cloves
2 sprigs of fresh rosemary
salt
olive oil
sunflower seeds (optional)
feta (optional)


METHOD 

Pre-heat oven to 180 degrees Celsius
Peel the entire butternut and slice down the center so you have two half round pieces. each with a flat side that looks like a semi-circle.
Now thinly slice the butternut halves into thin slices and layer in an oven dish. (fan out slightly)
Lightly drizzle the butternut with olive oil
Peel and finely dice the garlic cloves and sprinkle on top
Pull the leaves off the rosemary stems and sprinkle over the butternut 
Place in the oven with the bake and grill elements both on for roughly 30 - 40 minutes or until the butternut is soft when inserted with a knife and the edges are starting to brown
Sprinkle over the sunflower seeds 5 minutes before taking the dish out the oven so they can warm and go golden. (or toast them in a pan and sprinkle over the butternut once the dish is out the oven)
Crumble the feta with your hands and scatter over the dish.
Serve and enjoy warm - or leave to cool and enjoy in a salad

  1. This looks amazing and tasty. I can imagine the contrasting flavours of the sweetness of the butternut squash versus the tartness of the feta cheese.

  2. What do you mean by having the bake and grill elements both on? You also don't mention a temperature.
