LEMONADE POPSICLES

One hot summers afternoon my house contained 3 hot and sweaty little girls in need of some ice cream! (my daughter and two of her cousins). It was that sweltering kind of heat and plus who could say no to those cute little faces asking for a cold treat? - I couldn't.


I was low on bananas (our usual ice lolly base) which we blend and flavour then  freeze.
Feeling sure I was going to disappoint these 3 I had to come up with a new plan - thinking through the usual ice lolly bases I had no yoghurt or milk around (we're dairy free). The closest thing I could thing of was making a homemade lemonade and freezing it. Little was I to know that this recipe would become a huge hit! I love it when we least expect something to be great and then life surprises you with a happy twist.

These are SUPER easy to make and not an exact science for the ratio in the ingredients as it really depends on how sour your lemons are and how sweet you want to make them.

**Please feel free to change the sweetener in the recipe to the kind you deem appropriate for the kids in your household

Makes 3- 6 popsicles

INGREDIENTS
2 - 5 Lemons squeezed
1 - 3 Tablespoons Brown organic Sugar (or honey, xylitol, coconut sugar, agave etc)
125ml - 200ml filtered water

METHOD
Place sugar or sweetener of choice in a small pot with 5 tablespoons of water.
Place on medium heat and stir until dissolved.
Take off the heat and stir in the lemon juice
Add some of the water (not all) and taste.
Add more water until the desired dilution is reached.
IF NEEDED: Add more or less sugar or lemon to taste.
Pour into molds and freeze.
Take out and enjoy

Depending on size of molds - This recipe should make around 3 - 6 Ice lollies/popsicles.

|PS| I am not condoning sugar as a great snack for kids. We added as little as we could to off balance the sourness of the lemons. We don't eat these everyday and practice a mindset of everything in moderation.

  2. Looks delicious - especially on a hot summer day. Have you ever tried using a Meyer lemon? These are quite a lot sweeter than other lemons, you could use less sugar too.
