STRAWBERRY FROZEN YOGHURT

How bright and luscious are these strawberries?


I like my frozen yoghurt to taste more like the flavour its supposed to be and less like yoghurt.
So my fruit to yoghurt ratio is around 2 parts fruit to 1 part yoghurt.
If you like yours to taste more like yoghurt - simply add more of the white stuff (yoghurt) until it is to your taste.

So bright and fruity! This has the perfect amount of strawberry to yoghurt ratio :) As in it actually tastes like real strawberries... yay!

INGREDIENTS
1 cup of Strawberries (or as big a batch as you want to make)
Half a cup of plain Greek Yoghurt
3 - 5 teaspoons brown organic sugar (or honey/ agave/ coconut sugar or sweetener of choice)
1 vanilla pod
Half a lemon

METHOD
Wash and take the tops off your starwberries. Cut them up into pieces.
Place your Strawberries into a large glass jar or big bowl
Cut open your vanilla pod and scrape the seeds into the bowl of strawberries. Place the open pod of vanilla amongst the strawberries - nestle it into the middle (or cut it into 2 or 3 pieces and place amongst the strawberries)
Sprinkle a little of the sugar/sweetener over the strawberries (about 3 teaspoons)
Place the lid on the jar or cover your bowl and place in the fridge for at least 20 min but can be left for as long as over night
When you are ready to make the frozen yoghurt - take the strawberries out of the fridge and place in a blender , remove the vanilla pod/s and blend until smooth (alternatively if you don't have a blender mash with a fork - will result in a chunkier frozen yoghurt)
Add the yoghurt and blend
Squeeze in some lemon juice - stir and taste
Add more sugar or lemon until you are happy with the taste
Place in your ice cream machine and churn

*If you don't have an ice cream machine place the mixture in a low sided metal pan or bowl and place in the freezer. Take out every 30 - 45 minutes and beat with an electric beater until nice and smooth and the ice crystals have been broken up - the more time u beat and return to freezer the smoother and creamier it your frozen yoghurt will be :)

Of course if you don't feel like all the hassle you could simply just eat the strawberries with the yoghurt ;)
